This month's food question comes from Stephen Lannan of Millington. He writes:

Chef, I like to cook and I like to use fresh ingredients. Now that Summer is upon us, what would you recommend as some of the tastiest ingredients to incorporate into my recipes?

CHEF'S ANSWER: Stephen, thanks for your question. I'm thrilled to be a part of the Pluckemin Inn team, and happy to answer this question. Summer is one of my favorite cooking seasons because so many fresh ingredients become available, and their flavors are so varied.

One of my favorite ingredients is Fennel. This bulb plant has rich flavor and multiple uses - you can use fennel raw in a salad for a refreshing and unexpected licorice flavor. You can also cook with fennel for a more subdued and aromatic anise flavor, perfect for accompanying dishes as in a risotto or a warm salad. You can even use the leaves (which are called fronds) as a garnish for a hint of that wonderful fennel flavor.

Another great summer ingredient is Peas. When these are fresh, they have such a distinct flavor, and you can prepare peas in so many ways. One of my favorite recipes is a chilled pea soup, which is surprisingly refreshing in the warm weather. This is a very versatile dish, as you can choose from any number of preparations, and give it personality wth the garnish you choose. I like it with fresh sliced clams and a dash of lemon. For a more subtle and smooth flavor, try it with an herbed creme fraiche.
